                                            Asparagus Pancakes

                                            Ingredients:
                                            ½ package of fresh asparagus
                                            2-3 tablespoons Olive oil
                                            ¼ cup (or more if you desire) Mozzarella cheese shreds or rice shreds mozzarella style
                                            1/8  teaspoon asafoetida
                                            Salt and pepper to taste

                                            Directions:
                                            Slice asparagus in half long ways.
                                            Put olive oil in pan  with asafoetida and sautee asparagus.  Brown lightly.
                                            Turn all of them over.
                                            Cook about 5 minutes.
                                            Then take asparagus out of the pan.  Put 1 Tablespoon of oil and drop cheese in pan.  Let i melt to form a pancake.  Once it get crispy you will be able to place asparagus in the middle of the cheese pancake and bring both ends to the middle covering the asparagus.  Then remove from pan and serve.
