Chocolate Chip Ginger Cookies
Ingredients: Makes 24-30 cookies depending on how big you make them
2 1/4 cups all purpose flour
2 teaspoons ground ginger
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon salt
1 cup butter softened
3/4 cup white sugar
1 egg replacer
1 tablespoon water
1/4 cup molasses
6 oz semi sweet chocolate chips
Directions:
Preheat oven to 350 degrees (175 degrees C) Sift flour, ginger, baking soda, cinnamon, cloves and salt and set aside.
In a bowl, cream together the butter and sugar until light and fluffy. An electric mixer works best. Add egg replacer, water and molasses. Gradually add flour mixture. Now add the chocolate chips and mix into the batter. Take a scoop (med. stainless steel one) and place on cookie sheet spacing them out with enough room to grow. Maybe 11/2 inches between each one. If you don't have a scoop you can use a hefty tablespoon. No need to grease the cookie sheet.
Bake for 8 - 10 minutes in a preheated oven. Let cookies cool 2 minutes before removing from cookie sheet.
