                                            Coconut Basmati Rice

                                            Ingredients
                                            1 ½ cup water
                                            1 cup brown basmati rice
                                            ½ cup coconut milk
                                            ½ teaspoon tumeric
                                            ½ teaspoon salt
                                            1 cinnamon stick
                                            ½ cup currants or raisins
                                            1 jalapeno pepper chopped – you can add 2 jalapeno peppers for a real kick
                                            1/2 bar of tofu optional cut into cubes

                                            Directions: 
                                            In a saucepan, with a tight fitting lid, bring the water to a boil.  Add rice and all other  ingredients.  Return to a boil.  Stir, cover and reduce heat to low and simmer for 15 minutes.  

                                            Remove cinnamon stick, and stir to fluff rice and serve

                                            You can also saute some tofu in oil and soy sauce and serve in  rice.
