Nankhatie makes about 24 cookies
Ingredients:
1 cup semolina
1 cup all purpose flour
1 cup butter
1 cup powdered sugar
1 teaspoon vanilla
sliced almonds
Directions:
Combine flour and semolina and set aside.
Cream the sugar and butter in an electric mixer and very slowly add the semolina/flour mixture, beating continually to whip in the air.
Place dough in a bowl and let rest at least 4 hours.
Dip your hands in milk and knead the dough.
Knead in the vanilla.
Roll dough into 1" balls and place on cookie sheet about 2" apart.
Garnish tops with almonds.
Bake at 350 until golden brown. About 10 minutes, keep an eye on them.
Let cool on a cookie sheet.
