Peanut butter chocolate chip cookies - makes about 4 - 5 doz cookies
Ingredients:
2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) Butter or alternative
1/2 cup sugar or alternative
1/2 cup brown sugar
1 teaspoon vanilla extract
2 egg replacers
1 - 11 oz package semi sweet chocolate chips
1 cups chopped pecans
1/2 cup creamy peanut butter
Directions:
Preheat oven to 375
Combine baking soda and salt in small bowl.
Beat butter, sugar, peanut butter, vanilla and egg replacers in an electric mixer and mix until well combined.
Gradually add the flour to the mixer at a slow speed.
Stir in chocolate chips and nuts.
Drop by rounded tablespoons or use a medium cookie scoop and lay out cookies on a ungreased cookie sheet.
Cook for 9 - 11 minutes if tablespoons and 12-15 minutes if scoop.
Cool on a wire rack
