                                            Seitan Stew - you can also use TVP
                                            serves 6

                                            Ingredients:
                                            1 8 oz package of seitan or make your own with vital wheat gluten
                                            8 oz. roughly cut mushrooms
                                            1/2 bag of baby carrots
                                            1/8 cup tamari (or soy sauce) or more you can taste
                                            2 TBSPNS mirin japanese rice wine
                                            2 TBSPNS brown sugar
                                            2 TBSPNS sweet or smoked paprika
                                            1 TBSPNS ground coriander
                                            1/4  cup of fresh dill cut up with a knife
                                            1 pinch of chipotle pepper
                                            1 can of tomato paste
                                            1 15 oz can diced or crushed  tomatoes
                                            1 tspn salt
                                            pinch of asafoetida
                                            1/2 stick butter

                                            Directions:
                                            Saute seitan in oil and paprika until browned. 
                                            Add in mushrooms and baby carrots.  Add the remaining ingredients.  Simmer on low for 30-40 minutes.
