                                            Tempeh Avocado Club Sandwich

                                            Ingredients:
                                            1 package soy tempeh
                                            Safflower oil
                                            Avocado
                                            3 slices bread of your choice
                                            Swiss cheese (optional)
                                            Lettuce
                                            Tomato
                                            Directions:
                                            Cut slice off the bar of tempeh to measure about 1/16 inch thin, not paper thin, but thin slices.  For one sandwich use about 8 slices.
                                            Fill a saute pan with about 1/16 inch of safflower oil.  Heat the oil and put the slices in.  Cook until golden brown.  They can burn easy, so keep watching them carefully.  Keep some folded paper towels next to you
                                            and when you remove the pieces put them on the towel to drain off excess oil.  You will cook the slices for about 3 minutes on each side.  You can leave in longer if they are not golden brown.  I like them crunchy in the sandwich.
                                             
                                            Russian Dressing:
                                            Ingredients:
                                            4 tablespoons Vegennaise(eggless mayo)
                                            1 tablespoon sweet pickle relish
                                            1 tablespoon tomato paste
                                            1 teaspoon sugar or agave

                                            Directions:
                                            Mix all ingredients well.  This is a dressing which works on salads as well and will keep in fridge for weeks.
                                            Slice a few thin slices of avocado, 2 slices tomato and some lettuce.
                                            Toast 3 slices of bread and spread Russian dressing on each slice.  Then layer the sandwich as follows:  Lettuce, tomato, avocado and tempeh.

                                            Once sandwich is complete, press down to make it compact, slice into quarters and stick a toothpick into each quarter.
