                                            Zucchini patties

                                            Ingredients:
                                            2 1/2 cups grated zucchini
                                            1 cup grated cabbage
                                            1/2 cup garbanzo bean flour
                                            1/2 teaspoon ground cumin
                                            salt and pepper to taste
                                            Safflower or canola oil

                                            Directions:
                                            Place all veggies in a paper towel and place in colander.  Let stand 30 minutes.  Squeeze out excess moisture.

                                            Mix all ingredients in a large bowl and mix with hands until well combines.  Cover and refrigerate for 1 hour.

                                            Remove from fridge and take a handful of batter to make patties.

                                            Heat oil in skillet.   Place pattie in heated pan.  You want it crunchy.  Cook about 4-5 minutes on each side.  Remember crunchy not burnt.
