Veggie Kebobs serves 4
Ingredients:
Safflower oil
2 tablespoons tomato paste
5 tablespoons honey
1/2 cup soy sauce
2 tablespoons grated or chopped fresh ginger
1 bar Tofu (optional) (Cut tofu in half longways then cut in triangles)
1 can crushed pineapple (optional)
wooden skewers (soak in water before putting them in oven)
Choice of veggies: Portobello mushrooms cut in triangular pieces, oyster mushrooms, shitake mushrooms, button mushrooms, zucchini, red, yellow, orange and green peppers, belgian endive and asparagus.
Directions:
Preheat oven to 400 degrees.
Combine all ingredients in a blender for 10 seconds. Sometimes I add in a small can of crushed pineapple in syrup (Dole).
Marinate your chosen veggies for 30 minutes up to one hour or more.
Put veggies and tofu on skewers. Place on cookie tray and bake at 400 degrees for 10 minutes.
Now turn off the oven and put on the broiler and broil for 5 minutes on each side. Do not put the tray on the highest rack in oven. Put tray on 2nd rack from top.
