Zucchini Patties makes 5 -6 patties
2 1/2 cups grated zucchini
1 cup grated cabbage
1/2 cup garbanzo bean flour
1/2 teaspoon ground cumin
salt and pepper to taste
Safflower, canola or olive oil
Place all veggies in a paper towel and place in collander. Let stand 30 minutes. Squeeze out excess moisture.
Mix all ingredients in a large bowl and mix with hands until well combined. Cover and refridgerate for 1 hour. Remove from fridge and take a handful of batter to make pattie.
Heat oil in pan and place pattie in heated pan. Let it get crunchy (about 4-5 minutes each side-or more depending on your taste).
